The blend of Merlot and Syrah is selected to support this style. The grapes are harvested slightly earlier, preserving natural acidity and favouring tension and aromatic brightness over concentration. Vinification follows the principles of carbonic maceration. Whole clusters are placed in sealed tanks under an inert atmosphere, allowing fermentation to begin within the berries themselves before the juice is released. Gentle destemming and further sorting take place at the winery, followed by gravity filling of concrete tanks with whole berries. Fermentation and maceration are conducted with close attention to temperature and time, followed by malolactic fermentation. The wine is aged for 12 months in French oak barrels, 50% new and 50% one-year-old, to add structure and quiet complexity without overshadowing the varietal character.
