Crafted from 100% Merlot, Shine On begins in the vineyard, where grapes are harvested slightly before full ripeness to preserve freshness and natural acidity.
From there, every step is guided by precision:
- only free-run juice is used
- pressing is gentle and controlled
- fermentation takes place at 14°C
- the process follows white winemaking techniques throughout

The grapes are harvested slightly earlier, preserving natural acidity and favouring tension and aromatic brightness over concentration. Vinification follows the principles of carbonic maceration. Whole clusters are placed in sealed tanks under an inert atmosphere, allowing fermentation to begin within the berries themselves before the juice is released.
