Blanc de Noir — “white from black” — is one of the most delicate expressions in winemaking. Its essence lies in gentle extraction, allowing the juice of red grapes to remain clear, untouched by colour.
Crafted from 100% Merlot, Shine On begins in the vineyard, where grapes are harvested slightly before full ripeness to preserve freshness and natural acidity.
From there, every step is guided by precision:
- only free-run juice is used
- pressing is gentle and controlled
- fermentation takes place at 14°C
- the process follows white winemaking techniques throughout
The result is purity — effortless, clean, and precise.
