Winemaking at Bessa Valley

Winemaking at Bessa Valley is guided by place, experience and sense of art. The estate combines the natural strengths of the Thracian Valley with a refined French approach to viticulture and vinification, allowing both red and white wines to express their origin with clarity and balance.

The Vineyards

The winemaking process begins in the vineyards, divided into carefully selected parcels, each evaluated according to soil composition, exposure, and microclimate. Limestone-rich soils ensure excellent drainage and naturally regulate vine vigor, encouraging deep root systems and steady, balanced growth.

Warm days, cool nights, and long autumns allow for slow, even ripening across all varieties, preserving freshness while enabling full aromatic and phenolic maturity.

Grape Varieties

Bessa Valley cultivates grape varieties chosen for their proven affinity with the terroir.

Red varieties — Merlot, Syrah, Cabernet Sauvignon, and Petit Verdot — form a strong foundation, contributing structure, depth, and aging potential. These wines are shaped by balance rather than power, emphasizing precision and clarity.

Alongside them, white varieties — Marsanne, Roussanne, and Viognier — thrive in the valley’s limestone soils and balanced climate. These varieties allow the estate to produce white wines with depth, texture, and layered aromatics, combining freshness with complexity and a clear sense of place.

Both red and white grapes are managed with equal attention in the vineyard, with harvest decisions made parcel by parcel to ensure optimal ripeness and expression.

Vinification Philosophy

Winemaking follows a philosophy of precision and minimal intervention. Grapes are vinified separately by parcel and variety, allowing individual characteristics to emerge naturally.

Fermentation and extraction are carefully controlled, guided by the style and structure of each wine rather than a fixed formula. The aim is balance, purity, and a natural expression of fruit and terroir.

Oak Aging and Maturation

Aging is approached with restraint and purpose. The estate works exclusively with premium French oak barrels, selected to support the wines without masking their identity. Barrels are used for a limited number of aging cycles to ensure subtle, integrated oak influence.

Maturation takes place in the naturally insulated cellar carved into the hillside rock, where stable temperature and humidity provide ideal conditions for slow, harmonious development.
