The grapes are harvested by hand with careful quality control in the vineyard. After destemming and berry selection on vibrating tables, the fruit is transferred by gravity into concrete tanks without crushing. After malolactic fermentation, the wine is aged for 12 months in French oak barrels – 30% two-year-old and 70% three-year-old barrels – adding texture and subtle complexity without dominating the fruit. The final blend is filtered and bottled.
