Winemaking The grapes are harvested by hand with strict quality control in the vineyard. Cold maceration precedes fermentation, followed by controlled alcoholic fermentation and extended warm maceration to build depth and texture. After malolactic fermentation, the wine is aged for 18 months in French oak barrels, exclusively new oak, shaping structure and longevity. The final blend is filtered and bottled. Winemaking Production begins with careful parcel selection and detailed grape analysis. The grapes are hand-harvested and undergo destemming followed by quality separation of whole berries on vibrating sorting tables. Direct pneumatic pressing allows precise control of juice parameters such as colour, total acidity and phenolic balance. Alcoholic fermentation lasts around 20 days at controlled temperatures of 14–16°C, preserving aromatic freshness. The wine is aged on heavy lees for three months, followed by blending and additional ageing on fine lees for 1–3 months, contributing subtle texture and complexity. The final stages include stabilisation, filtration and bottling. Average annual production: Approximately 4,000 bottles (0.75 L).
