The process begins in the vineyard, with careful parcel selection, precise harvest timing, and hand-picking under strict quality control. In the winery, every step is designed to preserve finesse:

• gentle destemming and whole-berry selection
• direct pneumatic pressing for delicate colour extraction
• fermentation at controlled temperatures (14–16°C)

Texture, Depth & Balance

The wine gains further dimension through ageing:

• 3 months on heavy lees
• followed by additional ageing on fine lees

This approach brings not only freshness, but also: subtle texture, depth, and a soft, rounded mouthfeel.
