Cabernet Sauvignon 2023

Cabernet Sauvignon 2023: A Clear Expression of Place and VarietyCabernet Sauvignon 2023 presents a focused and composed interpretation of the variety from Bessa Valley. It reflects the natural clarity of Cabernet Sauvignon when grown with care and handled with restraint, allowing fruit, structure and freshness to find their own balance.Tasting Profile & Sensory ExperienceThe wine shows a deep garnet colour, clear and concentrated. The aromatic profile is pure and well-defined:
  • Primary aromas: Red cherry, raspberry and fig.
  • Secondary notes: Gentle pepper spice, toasted nuts and subtle hints of coffee.
On the palate, Cabernet Sauvignon 2023 is dense and structured, with medium to high tannins that provide shape and length. At the same time, the texture remains notably soft and rounded, giving the wine an approachable and well-balanced character. The finish is long, fruity and harmonious, completing the impression of an expressive yet measured Cabernet. Terroir & Winemaking The vineyards of Bessa Valley provide the conditions for Cabernet Sauvignon to ripen steadily, preserving freshness while building structure and depth. The 2023 vintage reflects a careful balance between varietal definition and the signature of the site. Grape Variety:
  • 100% Cabernet Sauvignon
Winemaking: The grapes are harvested by hand with strict quality control in the vineyard. After gentle destemming and careful berry selection, whole berries are transferred by gravity into concrete tanks. Cold maceration precedes fermentation, followed by controlled alcoholic fermentation and warm maceration to achieve a balanced extraction. After malolactic fermentation, the wine is aged for one year in French oak barrels: 20% first-fill, 40% second-fill and 40% third-fill, allowing the oak to support the wine without overshadowing the fruit. The final blend is lightly filtered and bottled. Food Pairing & Serving Suggestions Cabernet Sauvignon 2023 pairs naturally with structured dishes and savoury flavours:
  • Red meats: Grilled steak, beef brisket, lamb chops
  • Hearty dishes: Slow-cooked stews, roasted mushrooms
  • Cheeses: Aged and firm cheeses
Serving temperature: 16–18°C Cellaring potential: Enjoyable in its youth for its clarity and fruit, with the structure to develop further over the next 4–7 years.
