Winemaking & Philosophy

Some wines are built from the outside in. Others begin within. Dream On follows the second path.

Dream On Merlot & Syrah is produced using the Carbonic Maceration method, chosen specifically to emphasize freshness, vibrancy, and pure fruit expression. The grapes are harvested slightly earlier to preserve the bright aromas of juicy red fruit. Whole clusters are placed intact into fermentation tanks, which are then sealed and filled with inert gas to create an oxygen‑free environment.

Fermentation begins naturally inside the unbroken berries. Only healthy, perfectly sound grapes are selected to ensure precision and purity throughout the process. Inside each berry, an enzymatic transformation takes place, shaping the wine’s distinctive aromatic profile. When the berries eventually burst, the juice is drawn off, the skins and stems are removed, and the grapes are gently pressed. Fermentation continues at low temperatures to preserve freshness and aromatic intensity.

The wine shows a vivid ruby‑red color. The nose reveals expressive notes of blackberry, blueberry, and fresh plum, lifted by subtle hints of tobacco and chocolate. The palate is juicy, lively, and compelling, leaving a fresh and memorable impression.
